Smoke n spice roasted vegetables

I love vegetables but if your not a fan or fancy something different you should try this.

Chop and slice your favourite vegetables, I decided on yellow pepper, sweet potato, broccoli, parsnip, butternut squash.

Put into a roasting tin and drizzle some olive oil over.

Mix up 1 tsp paprika, 1 tsp cumin, 1/2 tsp salt and pepper and sprinkle over vegetables. You can add more spices if you like but watch you don’t overpower the taste of the vegetables.

Put into a fan oven at 220 deg for 30 minutes.

Tasty side portion to serve with some nice fish, chicken or anything of your choice.
