Mini Chocolate Sponge pudding

Chocolate custard

Mini – meaning recipe makes 2

1 medium egg ( weights about 50g)

50g caster sugar

50g unsalted butter

30g self raising flour

20g cocoa powder

1 teaspoon vanilla extract

 

Preheast oven on Multilevel to 170 deg C and grease two ramekins

Put all the butter and sugar into a bowl and cream together

Crack the egg into the butter and sugar mixture, do not over whisk, add the vailla extract and mix in.

Sieve the flour and cocoa little at a time into the mixture and fold in gently, then mix together very well.

Divide mixture between two ramekins or smalll pots and bake for about 20 minutes.

Serve with some warm  or cold custard topped with a little grating of chocolate.
